About the Chef - Maurice McCarthy

Born into a dynasty of Irelands most distinguished and successful chefs, watching his dad, John McCarthy create masterpieces in sugar, butter, chocolate and pastalage sowed a seed of fascination for the craft at a very young age. A career which begun under the guidance of his late dad and later by his Uncle Mosse McCarthy, Eugene O’Sullivan and college lecturer Pat Kivlahan. After numerous accolades in the legendary Ashford Castle where he trained under Ken Whade, a love of travel sent him to Germany, Switzerland, Africa and America where he was immediately immersed in the world of Michelin Star standards in which his passion for cooking had begun a journey that would lead to many awards working with top class professionals and establishments developing a product of excellence. Eventually Maurice landed back on Irish shores and quickly found a natural home as a college lecturer teaching what he has mastered in his career. He then combines that rare mix of an outstanding career at the G.M.I.T college Galway with fingers dipped in several other projects, one being managing director of his own catering company overseeing the running of three restaurants. As executive chef consultant at the superb, newly refurbished Salthill Hotel, recently hosting The Panel of Chefs ‘Golden Jubilee’ AGM weekend, producing a seven course meal for 280 guests with each course of competition standard and was voted “best ever” from the countries top chefs.
