The Salthill Hotel Executive Chef Tony Ryan graduated with a distinction, from Rockwell catering college. He has enjoyed a wealth of experiences in the Irish, UK and USA hospitality industry.
He kick started his professional career at the 910 bedroom Cumberland Hotel in Marble Arch, London. He also worked at Lords Cricket Ground and Twickenham Rugby.
Tony moved from London to New York city and took up his role as Head chef at the 250 seater 'Mustang Harry’s 250' and the 260 seater 'Robert Emmetts'. Tony was privileged to head up the catering for many high profile events held for the New York Times Group, MTV, Cast and Crews of Broadway Shows and also Political Conventions. Tony frequently appeared on the Food Network providing cookery demonstrations and culinary expertise, and worked with many celebrities and high profile figures, including the Duchess of York – Sarah Ferguson.
Tony represented New York and Won the grand prize in a 'ready set cook' cook off in the New Yorks Javits Centre. He joined a select brigade of chefs that hosted a Gala Dinner for Mayor Guilliani at Gracie Mansion on St. Patrick’s Day. Tony was a member of the taste of New York chefs who provided restaurant samples at an annual event held in Manhattan, which catered to over 80,000 guests. Tony returned to Ireland in 2003, after an extensive and rewarding career in the States.
He oversees all operational aspects of the Amber Room restaurant, PROM, Blackrock Bar and Banqueting kitchens. His innovation and creativity ensures menus are seasonal and varied, using select local ingredients infused with inspirational ideas!
